A nostalgic vintage recipe brought back with a DIY Blondie twist
This cake is pure Easter joy. Growing up, my Daddy would make this adorable bunny cake from two 9-inch round pans—one circle for the head and the second turned into ears and a bowtie. It was always the centerpiece of our table, and this year, I wanted to bring it back with my own spin: soft pastel coconut fur, pink tulips, and a whole lot of heart.
You’ll Need:
- 2 (9-inch) round cakes (your favorite flavor – I used strawberry cake with almond extract)
- 1 batch of buttercream or cream cheese frosting
- Sweetened shredded coconut (dyed pink & white if you like)
- Candy for decorating (eyes, nose, whiskers, bowtie details)
- Optional: edible flowers like tulips for a fresh spring finish
Assembly Instructions:
- Bake two 9-inch round cakes and cool completely.
- Leave one cake whole for the bunny’s face. Cut the second into two ears and a bowtie (cut a football shape from each side, and the middle becomes the bowtie).
- Arrange on a large platter in a bunny shape.
- Frost generously, then coat with coconut. Decorate the face and bowtie with candy or colored frosting.
- Add fresh flowers if desired, and serve with a smile 💗
