Fall just isn’t complete without pumpkin spice, and these cozy pumpkin doughnuts are everything I love about the season rolled into one sweet bite. Lightly spiced, perfectly soft, and so easy to make, they’re the perfect excuse to enjoy a cool autumn morning with a warm cup of coffee.

Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- ¾ cup canned pumpkin puree
- ½ cup brown sugar
- ½ cup granulated sugar
- ½ cup vegetable oil (or melted butter)
- 2 large eggs
- 1 tsp vanilla extract
For the Cinnamon Sugar Coating:++++++++++
- ½ cup granulated sugar
- 1 tbsp cinnamon
- 4 tbsp melted butter
Directions:
- Preheat oven to 350°F. Grease a doughnut pan.
- In one bowl, whisk dry ingredients (flour, baking powder, baking soda, spices, salt).
- In another bowl, mix wet ingredients (pumpkin, sugars, oil, eggs, vanilla).
- Fold dry into wet until just combined.
- Spoon batter into pan (about ¾ full). Bake 15–18 min.
- While warm, brush doughnuts with melted butter, then roll in cinnamon sugar.
- Enjoy with coffee or cider!
