Ingredients
  

  • 8 oz pasta any type
  • 1 zucchini sliced
  • 1 bell pepper sliced
  • 1 cup cherry tomatoes halved
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions
 

  • Cook the Pasta: Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  • Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté for 2-3 minutes until fragrant. Add zucchini and bell pepper, cooking until they are tender, about 5-7 minutes.
  • Add Tomatoes: Stir in the cherry tomatoes and Italian seasoning. Cook for an additional 2 minutes until the tomatoes are slightly softened.
  • Combine: Add the cooked pasta to the skillet, tossing everything together. Season with salt and pepper to taste.
  • Serve: Plate the pasta primavera, topping with freshly grated Parmesan cheese before serving.
