Pumpkin Cobbler

This easy pumpkin cobbler is a cozy twist on classic pumpkin pie—sweet pumpkin filling topped with buttery cake mix, crunchy pecans, and served warm with ice cream.

Ingredients
  

  • 1 can 15 oz pumpkin puree
  • ¾ cup evaporated milk
  • ¾ cup sugar
  • 2 eggs
  • 2 tsp pumpkin pie spice
  • 1 box yellow cake mix
  • 1 cup chopped pecans optional
  • 1 cup melted butter

Instructions
 

  • Preheat oven to 350°F. Grease a 9x13 pan.
  • Mix pumpkin, evaporated milk, sugar, eggs, and spice. Pour into pan.
  • Sprinkle dry cake mix evenly over pumpkin layer.
  • Top with pecans. Drizzle with melted butter.
  • Bake 50–55 minutes until golden.
  • Serve warm with vanilla ice cream or whipped cream.
